Ingredients
  • 2 slices of bread
  • 3-4 slices of Euro mortadella slices
  • 1 egg
  • 1 slice of cheese (cheddar, or mozzarella)
  • 1 tbsp mayonnaise
  • 1 tsp Dijon mustard (optional)
  • A handful of lettuce
  • 1 tsp olive oil or butter
  • Salt and pepper to taste
Instructions
  • Lightly toast the bread slices in a toaster or on a skillet until golden brown and slightly crisp, then set aside.
  • Heat a non-stick skillet over medium heat, add the mortadella slices, and cook for 1-2 minutes on each side until slightly crisp. Remove and set aside.
  • In the same skillet, add a small amount of olive oil or butter, crack the egg into the skillet, and cook to your preference. Sprinkle with salt and pepper.
  • Mix mayonnaise and Dijon mustard in a small bowl for a tangy spread (optional).
  • Spread the mayonnaise mixture on one side of each toasted bread slice.
  • Layer lettuce on one slice, followed by the mortadella slices, cheese, and fried egg.
  • Top with the second slice of bread and, if desired, return the assembled sandwich to the skillet over low heat, cover, and cook for 1-2 minutes to melt the cheese.
  • Slice in half and serve warm. Enjoy!
