Ingredients
- 2 slices of bread
- 3-4 slices of Euro mortadella slices
- 1 egg
- 1 slice of cheese (cheddar, or mozzarella)
- 1 tbsp mayonnaise
- 1 tsp Dijon mustard (optional)
- A handful of lettuce
- 1 tsp olive oil or butter
- Salt and pepper to taste
Instructions
- Lightly toast the bread slices in a toaster or on a skillet until golden brown and slightly crisp, then set aside.
- Heat a non-stick skillet over medium heat, add the mortadella slices, and cook for 1-2 minutes on each side until slightly crisp. Remove and set aside.
- In the same skillet, add a small amount of olive oil or butter, crack the egg into the skillet, and cook to your preference. Sprinkle with salt and pepper.
- Mix mayonnaise and Dijon mustard in a small bowl for a tangy spread (optional).
- Spread the mayonnaise mixture on one side of each toasted bread slice.
- Layer lettuce on one slice, followed by the mortadella slices, cheese, and fried egg.
- Top with the second slice of bread and, if desired, return the assembled sandwich to the skillet over low heat, cover, and cook for 1-2 minutes to melt the cheese.
- Slice in half and serve warm. Enjoy!
